Our own range of turkeys grown especially for us in Norfolk by Robert Garner and Family. These turkeys are a free range bronze or a free range Norfolk Black. The bronze is denoted by it’s plumage, which bears an iridescent bronze-like sheen. The Garner Family use only the best slow maturing birds and feed them the finest of feeds to ensure great taste and tenderness.
English Boneless Turkey Joints
We source all our boneless turkeys from Leicestershire Farm Fresh Turkeys based in Cold Newton, just 10 miles from Oakham. Our skilled butchers can prepare these turkeys to your specific requirements. We typically cover the joint in bacon which aids it’s roasting and stuff them with sage & onion if you require.
The unique Gressingham Duck was created by breeding the Wild Mallard and the Peking. The result is a bird that is renowned for its wonderful flavoursome meat with approximately 20% more breast meat than other ducks of the same weight. As well as a high proportion of breast meat, Gressingham Ducks are renowned for their rich gamey flavour, lower fat content and thin crispy skin. We can also stuff the duck with pheasant breast and chicken breast to produce a three bird roast.
Botterills Free Range Geese
We source our free range geese direct from Botterills Farm in Croxton Kerrial near Grantham. The Botterill family have owned the farm for over 70 years and produce some of the finest geese. The flocks are quite a sight as they are herded through the local villages. We have sourced many geese over the years, but we particularly enjoy the Botterills bird.
Our game is all locally sourced from game keepers. We mature our pheasant for five days to enhance and deepen the already rich taste of this delicious bird. Pheasant is best roasted and forms the centrepiece of an amazing game Christmas dinner.
Three Bird Roast
We create this with either a turkey or a goose. We remove the rib bones then stuff the bird with either duck and pheasant breast or chicken and pheasant breast and our ‘Head Butchers special stuffing’. The bird is very easy to carve, looks and tastes wonderful as you serve layers of three meats to your guests. This is especially useful if you are trying to serve a goose to a larger party as the portions will go that bit further.
Our team of experienced butchers dry age all our beef on the bone for 28 days to ensure great flavour and tenderness. Only then is the beef ready to be cut and trimmed to form the centre piece for your Christmas Dinner. We would recommend Sirloin or French trimmed Fore-Rib as the best of the cuts. All of our lamb is grown on British farms and selected only from suppliers that believe in our own exacting standards. The lamb is matured on the bone for 7-10 days before being carefully prepared for you. We produce a variety of wonderful lamb joints but we believe that one of the best for Christmas is our leg of lamb with the bone in.
We have a large selection of pork cuts to choose from this Christmas. It is so important to choose the right joint for your Christmas Dinner, so speak to one of our Hambletons team. We would recommend loin of pork scored carefully. Make sure to cover the scored rind with plenty of salt before cooking, this will help to create extra crispy crackling.
We source all of our cured bacon from our partner in North Lincolnshire. Simon and his team cure the best-tasting bacon in the country. Try the smoked dry-cured short back bacon, which is beechwood smoked for extra taste. We can cut Gammon joints to whatever size party or family gathering you are catering for.
Our deli sells our famous range of pies, which are available in classic, large, 7 inch and 10 inch cutting pies. Stock up your fridge as they are perfect for unexpected guests, lunch or a light snack.
Our Cheese counters are stocked with over 200 different local, British and International cheeses. So whether you want to play safe with a traditional Cheddar, or test your palate with a more unusual flavour, we will have the cheese choice for you.
